Pineapple Tarts
I have had this recipe for over 40 years. It is a very simple and tasty.
1 egg
1tablespoon butter
2 tablespoons sugar
1 cup SR flour (not quite)
Mix all ingredients and knead. Use patty pan tray and roll out the dough and use a glass to cut circles. Make sure you grease your tray. Cook the cases in a moderate oven until light brown. These can be made up and stored in a airtight container.
Filling
Drain one can of crushed pineapple - add to juice 1 tablespoon custard powder and heat in the microwave for a min until thick. Add the pineapple back in and put into container and place in fridge. When ready to serve spoon into cases and add a spoon of cream on top and sprinkle with cinnamon.
You can also use the cases with jam or lemon meringue.
