Cooking with Thermowhizz
The a Raspberry shortbread I made in the Thermowhizz. I converted my recipe from CWA cookbook.
125grams butter
1 1/2 cups self raising flour
1cup coconut
1 small cup sugar
1 egg
Raspberry jam
Cream butter and sugar speed 4 10 secs. Scrape down sides. Add egg and mix 10 secs speed 4 . Add flour and mix speed 4 15 secs. Press into lined lamington tin or casserole rectangle dish. I place baking paper on bottom and on top and flatten the mixture in between until it is spread evenly. Spread jam over the top.
Topping Ingredients:
1egg
1/2cup sugar
1cup coconut
Place butter and sugar into bowl beat 30 secs speed 4. Add coconut and mix 10 to 15 secs. Pep read this over base and bake moderate oven 45 mins until golden brown. Yummy!!
